Kül means ash. It is the quiet half of fire — what is left on the ground the morning after, still warm. We wanted a name that pointed at heat with something behind it, rather than heat as a dare.
Right now there is no shop on this site, and that is deliberate. Everything is still in prototype. The recipes are being tested and changed, and nothing has a final name, a final heat level or a price.
What exists today
Three things, and none of them are finished:
- Small-batch hot sauces built on chillies grown on the island
- Dried and milled chilli powders, for use at the end of cooking rather than the start
- Köz Kırmızı, the first recipe far enough along to have a name and a label
An early-stage brand, not a factory. What exists today are test batches and a lot of tasting.
Why say so out loud
It would be easy to put up a shop page, take pre-orders, and work the rest out later. Plenty of brands do. We would rather the site say the true thing: this is not ready, and you should not pay for it yet.
The alternative is worse. A heat rating we invented, a launch date we guessed at, an ingredients list that changes after you have bought it — every one of those is a small lie that gets harder to walk back.
What the island gives us
Cyprus has some of the longest, driest summers in the Mediterranean, which is a climate built for ripening fruit slowly and completely. The earth is iron-red in places and has been growing food here for thousands of years. There is sea on every side, and salt has always been part of how the island preserves and seasons its food.
That is the whole argument for making this here rather than anywhere else, and it is the part we are least likely to change.
What happens next
More tasting. The recipes move, the labels move, and when a batch is good enough to stop changing, it stops changing.
